Objectives:
The goal of this continuing education program is to inform nurses, dietitians and health educators of six common foodborne parasitic infections. After studying the information presented here, you will be able to:
  • Discuss how to prevent infections from two of the most common parasites found in raw fish dishes
  • Explain why ingesting eggs from the pork parasite (Taenia solium) passed in human feces is more dangerous than eating pork containing the parasite
  • Describe two parasitic diseases that can be transmitted to others by asymptomatic carriers
