Objectives:
The goal of this program is to inform nurses, dietitians and health educators of five common foodborne parasitic infections. After studying the information presented here, you will be able to:
  • Discuss how to prevent infections from two of the most common parasites found in raw fish dishes.
  • Explain why ingesting eggs from the pork parasite (Taenia solium) passed in human feces is more dangerous than eating pork containing the parasite.
  • Describe two parasitic diseases that can be transmitted to others by asymptomatic carriers.
