The goal of this phytochemical continuing education program is to provide dietitians with knowledge about phytochemicals and their role in the maintenance of good health. After studying the information presented here, the learner will be able to:
  • Discuss the various types of phytochemicals and their evolving role in nutrition
  • Identify the various foods that are rich in phytochemicals and antioxidants, and explain the mechanisms of action for the various groups of phytochemicals
  • Educate patients on how to incorporate antioxidants and phytochemicals into a healthy diet.
