Objectives:
The goal of this dietary fiber and cholesterol reduction continuing education program is to inform and update dietitians, dietary managers, school nutritionists, fitness professionals and health educators on the role dietary fiber plays in cholesterol reduction and the prevention of heart disease. After you study the information here, you will be able to:
  • Explain three ways in which dietary fiber may protect against coronary heart disease
  • Describe the predominant way that viscous fibers are thought to lower serum cholesterol
  • List the Adequate Intake levels for dietary fiber for adult men and women
